Why does the program include 240 bottles? One standard barrel of wine holds 59 gallons. This translates into 25 cases or 300 bottles of wine. All wine “lots” experience gallonage loss during the process of filtration and bottling. After subtracting this loss, Bespoke customers are guaranteed to received 20 cases of wine (240 bottles). In addition to this guaranteed quantity, we're often able to bottle more wine including partial cases. The average bespoke customer receives 21-22 cases.
-
I see the word "varietal" on your website. What does that mean?"Varietals are specific types of wine. Some popular varietals include Chardonnay and Cabernet Sauvignon. Fun fact - many popular varietals were developed through the breeding of two “parent” varietals. For example, Cabernet Sauvignon was created through the breeding of Cabernet Franc and Sauvignon Blanc. The Bespoke program requires winemakers to choose one varietal.

If I want to produce more than one type of wine (varietal), how does that work? Is there a discount?"Each Bespoke package requires customers to develop a single “varietal” or type of wine. This creates limitations for people interested in developing a larger assortment of wine, or even a red and white wine simultaneously. Purchasing less than one barrel of wine results in “headspace” allowing oxygen inside the barrel turning the wine into vinegar. To avoid this issue, we require all customers to order a minimum of one barrel. If you are interested in developing a red and white wine, or two different varietals, we offer a $200 discount. For example, if you are interested in developing a Chardonnay and a Cabernet Sauvignon label, we would offer a $200 discount reducing the overall cost from $13,000 to $12,800.

How does the sampling process work? How do I get to determine which wine I want to bottle?Excellent question! Shortly after receiving a signed "service agreement" and initial deposit, we invite new Bespoke customers to visit their favorite wine store and taste several options of the wine they wish to make. Based on this taste review, Bespoke customers then forward their favorite selection to their project manager. Once our team receives this list, we will purchase the same wine and anaylize the sample using our in-house labratory equipment. This analysis will generate a number of vital metrics including - alcohol content, residual sugar levels, PH, acidity, and VA. Using these numbers, we send each new bespoke client five, 375mL samples of wine via mail. We encourage each client to taste this wine cold, and after it has been aerated. Many client enjoy this experience with friends and family. After tasting these samples, we have each Bespoke client complete a "tasting feedback summary" which provides important notes and directives to our winemaking team. Using this information, we mail an additional 3 samples for clients to review. After this second shipment, each Bespoke client will confirm their final selection. As confirmation of this selection, we send a "final formulatoin" sample. Once the final formulation is approved, each customer will complete an online "final formulation authorization" form which is maintained by the Bespoke team. If clients are unable to determine their final formulation within the set number of samples, our team is able to mail more options at the customer's expense. These fees will including winemaker labor and shipping fees.
